Apple released a software update for the iPod video and iPod nano that enables users to configure a volume limit.
Not sure what motivated Apple more to release this feature - the pending lawsuit about hearing loss or to protect the health of their customers.
Anyway, this update sounds like nicely implemented as it enables parents to limit the volume their kids can use on their iPod. The volume limit can be protected via a passkey.
More details in this press-release. The iPod software update 1.1.1 is available here.
